Soak chana dal for 1 hour, then drain and pressure cook with turmeric, ghee, and water for 3 whistles.
Drain the excess water, transfer dal to a pan, add jaggery, mash well and cook until thick. Add ghee, cardamom powder and cool.
Make small balls from the dal mixture for stuffing. Grease hands with ghee to prevent sticking.
Prepare the dough using wheat flour, maida, turmeric, salt, oil, and water. Knead well, rest for 1 hour, then knead again.
Take a small dough ball, flatten it, place stuffing inside, seal edges, and roll gently into a thin disc.
Cook on a hot tawa, flipping halfway. Apply ghee on both sides and cook evenly until golden brown.
Serve warm with ghee or milk and enjoy delicious homemade puran poli!
