In a bowl, combine rice flour, maida, rava, sesame seeds, crushed roasted peanuts, hing and salt. Mix well for an even blend.
Add onions, chilies, ginger, coriander, and hot oil. Crumble and mix everything together to enhance crunchiness.
Gradually add water and knead into a tight dough. Avoid adding too much water to maintain the right texture.
Pinch small portions of dough, roll into balls and flatten them slightly thick for a crispy texture.
Deep fry in medium-hot oil. Avoid touching for 2 minutes to prevent breaking, then fry both sides until golden brown.
Drain excess oil and serve hot with coconut chutney for a delicious snack. Enjoy your crispy Maddur Vada!
